I can’t remember where the inspiration for this massaged kale salad came from. Who knows, but I’m glad I saw it. Massaged kale salad is relatively quick to throw together and is packed with a good serving of protein from the lentils. If you’re planning to save this for leftovers, you might want to hold off on adding the avocado. Avocado gets a little funky when it sits overnight in a dressed salad. Just top each serving with avocados rather than mixing it into the dish. I hope you like this salad as much as we did!
Serves 4 as a main course or 6 as a side dish.
Massaged Kale Salad with Lentils and Goat Cheese

Ingredients
- 3 cups water
- 1 cup French lentils
- 3 tbsp red wine vinegar
- 2 1/2 tbsp olive oil
- 2 cloves garlic, minced
- 1 tbsp lemon juice
- 2 tsp course ground mustard
- 1/8 tsp oregano
- 1/4 tsp cumin
- 1/2 tsp sea salt
- fresh ground black pepper, to taste
- 1/2 small red onion, finely diced
- 1 14-oz. can hearts of palm, thinly sliced
- 1 avocado, diced
- 1 pint grape tomatoes, quartered
- 1/2 cup parsley
- 4 oz. goat cheese
- 1 bunch kale, stems removed and torn into bite size pieces
Instructions
- Combine water and lentils in a small pot, bring to a boil, cover and simmer for 25-minutes or till lentils are cooked.
- While the lentils are cooking, prepare the dressing and chop your veggies. For the dressing, combine olive oil, red wine vinegar, lemon juice, garlic, mustard, spices, and salt and pepper in a small jar with a lid. Shake vigorously and set aside.
- Place the kale in a large mixing bowl, pour half of the dressing over the kale and massage for approximately 2-minutes till the kale is soft and wilted. You should definitely feel the burn in your forearms for this technique.
- When the lentils have finished cooking, drain and rinse with cold water till the lentils have cooled to room temperature.
- Combine lentils, all veggies (except for kale), goat cheese and remaining dressing in a medium bowl. Toss till everything is evenly mixed.
- Pour veggie, lentil and goat cheese mix on top of the kale and toss till well-combine. Serve chilled.
