One of the great things about cauliflower is that this versatile vegetable can substitute for white potatoes in recipes such as cauliflower hash browns. In fact, cauliflower is one of my favorite potato substitutes especially in soups like this Paleo Cauliflower Soup. I included a recipe for cauliflower hash browns in my cookbook that’s scheduled to come out early next year, but I discovered a way to prepare a similar recipe without having to stand at the stovetop flipping hash browns for 20 minutes. The baked version of cauliflower hash browns isn’t quite as delicious as the stovetop version in the cookbook, but it was the perfect recipe for a busy morning when I didn’t have much time.
I added salt before pouring the cauliflower mixture into the pan, but the directions suggest salting it after it’s been baked. Adding salt to raw vegetables can cause the vegetables to lose some of the their juices, which prevents the crispy factor that we all love in a good hash brown. This is the number one reason I like the stovetop version better, but my constant search for easy, delicious, and nutritious recipes won it a gold star. It’s sure to become a family classic given its flavor, ease of preparation, and versatility.
- 1 medium head of cauliflower
- 3 eggs
- 2 tablespoons dried parsley
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 3 tablespoons cooking fat
- salt, to taste
- Preheat the oven to 400 degrees.
- Roughly chop the cauliflower into florets and grate it using a food processor.
- Heat a large caste iron pan on medium heat and grease the warm pan using the cooking fat. I prefer to use bacon grease for this recipe, but any healthy fat will do.
- In a large bowl mix together the grated cauliflower, eggs, parsley, garlic powder, and onion powder, and smooth the mixture flat into the hot pan.
- Bake the cauliflower mixture for 25 - 30 minutes or till set, move the pan to the top rack of the oven, and broil it for 2 - 5 minutes or till golden brown. Be sure to keep an eye on your hash brown so that it doesn't burn.
- Salt the top of the cauliflower hash brown, divide it into 6 equal pieces, and serve immediately.
- Try serving this delicious cauliflower hash brown with some fried eggs, fresh tomatoes, and a side of bacon.
