I’m always looking for ways to add more bone broth to our diet and what easier way than a very, very simple Paleo cauliflower soup? What I love most about this recipe is its simplicity. No, it’s taste. No, it’s versatility. Okay, so there are a number of things that I love about this recipe, but you’ll just have to try it yourself to know for sure.
I make this recipe using homemade bone broth (chicken or beef) from grass fed cows that I buy at the Farmer’s Market. You can use the store bought stuff, but you’ll be skipping out on the benefits of bone broth – dissolved minerals, collagen, and lots of gut repairing goodness. Making your own broth is especially easy if you own an electric pressure cooker. I know a number of folks who love their InstaPot, but I opted for the GOwise USA Electric Pressure Cooker that’s actually quite a bit bigger than the Instapot. 8qt vs. a measly 6qt makes a big difference when you’re trying to cook in bulk for the whole family. Having a pressure cooker makes this recipe a breeze as you’ll see below. The other wonderful tool that makes this soup especially creamy is my Blendtec Blender. It’s certainly not necessary, but I do think it makes a big difference in the end consistency.
We eat this soup as a side dish to almost any meal or it can be easily eaten alone topped with bacon (mmm… bacon) or any type of protein of your choice. I hope you enjoy it as much as my family does!
- 1 Tbsp cooking fat - I stick with lard, ghee or coconut oil
- 1 yellow onion, sliced
- 1 head cauliflower, roughly chopped
- 5 cloves garlic
- 2-4 cups homemade bone broth (depends on size of cauliflower and your desired consistency)
- 1 can coconut cream
- 2 tsp salt or to taste
- dash pepper
- Place cooking fat and onions into electric pressure cooker using the saute function. Cook for approximately 5 minutes, add garlic and saute till onions are caramelized and brown, approximately 7 minutes total.
- Add cauliflower and saute for another 3 minutes.
- Add bone broth, place lid on pressure cooker and cook on high pressure for 10 minutes.
- Release steam, add remaining ingredients and blend.
- I often double this recipe and use it for sides throughout the week.
