“Why a tropic smoothie recipe,” you say? It’s still a bit chilly up here in Vermont, but I’m hopeful for the day that I can walk outside in shorts and a tank top and feel the sun warming me from the outside in. In the meantime, I’ve been spending a ton of time prepping for my summer garden. We bought a house in December and the yard was shortly thereafter swallowed by mounds and mounds of snow. When the snow melted in April, I felt like I was discovering my own yard for the very first time. Low and behold, I have LOTS of garden space, which makes this gal pretty darn excited!
There’s something about gardening that gets me excited to eat better. For the past few weeks, I’ve been back in the habit of drinking a green smoothie every morning for breakfast and it feels fantabulous! I can feel my body emerging from winter, along with all of those tiny little seeds I planted a few weeks ago. After a quick glance out the window at my Red Russian Kale that is finally big enough to actually see from my perch in the kitchen (I mean, you can barely see them, but they’re there), I felt it time to kick summer into high gear with something a little tropical. So here’s a tropical smoothie recipe for you, my longing-for-summer friend. I hope you enjoy!
